I’m not immune to sweet or chocolate cravings, but when they hit, my goal is to make whatever it is I’m craving myself (then at least I know what goes in to it!). I love having these cookies around to fuel my day during heavy training loads or even during recovery. They are easy to make – apart from the almond meal, all the ingredients are fairly common in most kitchens and you don’t have to worry if you’re out of eggs or milk. This is a great way to use old bananas too! I found the recipe here but made some minor changes and added instructions.
Dark-Chocolate Banana Oatmeal Cookies
3 large, ripe bananas, well mashed (about 1 1/2 cups) or 2 ripe bananas + 1 small container applesauce
1 teaspoon vanilla extract
1/4 cup coconut oil, barely warmed
2 cups rolled oats
2/3 cup almond meal
1/3 cup shredded & unsweetened coconut
1/2 teaspoon cinnamon
1/2 teaspoon fine grain sea salt
1 teaspoon baking powder1 dark chocolate bar, chopped (Equal Exchange Extra Dark is THE Breaux favorite) OR carob chips
- Preaheat oven to 350F.
- Mix dry ingredients (except chocolate) & wet ingredients separately then combine. Fold in the dark chocolate last.
- Roll into small balls and place on lightly oiled cookie sheet(s); they will be fairly wet and a little difficult to combine.
- Bake at 350F for 20-25 minutes.
