Ok, well this is a little late, but since I only used half a roasted beet in yesterday’s beet smoothie, I thought the other half would be perfect for a Valentine’s treat! Or just an any-day treat. I’m sure kids would love colored pancakes, and no food coloring is involved.
Valentine’s Day (Beet) Protein Pancakes
- 2/3 c oatmeal
- 1 tsp baking powder
- 1 egg
- 1/2 c cottage cheese
- 1/2 roasted beet, peeled
- splash vanilla
- 1/4 c milk
- coconut oil
Blend all ingredients except milk and oil together with hand blender. Beet might remain grainy if not thoroughly roasted – it took me extra time with the hand blender to blend the beet. Add milk as needed to thin out mixture. Melt a pat of coconut oil in pan. Pour in pancake mix (~1/4 c per pancake) and flip when ready.
To be honest, most of my Valentine’s Day was spent working so my present to myself is a weekend of bike riding – can’t wait!!
