Easy Weeknight Bites

Super easy weeknight meal: brown rice tortilla (GF) with fat free refried black beans, goat cheese & cilantro, with guaco & salsa on the side.  Yum!


David-approved as well.  I had hauled some avocados from our visit to see my grandparents in California (they have an avocado tree in front of their house), and I had to use them before they went bad – darn Winking smile

You should also try these super delicious almond butter vegan cookies, which are almost gone at our house.


They are even better when warmed and topped with coconut ice cream & extra dark chocolate chips.  My heaven!
