Ahh, it’s Thursday night, and I have to say it was a pretty good week for me. I’m not sick (was feeling a little sick last weekend), work was relatively good, and I’ve been staying on my healthy eating streak (aka detox). Check out some successful recipes below:

I also made vegan pumpkin muffins for David from Have Cake Will Travel. We were out of eggs and had lots of frozen homemade pumpkin puree leftovers from November that needed to be used. They turned out really good – especially with the brown sugar topping.
